What it is

G.R. Balasubramaniam started GRB in 1984, delivering butter by bicycle around Bengaluru, and built it into a ghee business. Town Bus is its snack range, made near Madurai.

Madras mixture is the one on every tea-shop counter: gram-flour bits, fried rice flakes, roasted gram and peanuts, with curry leaves, chilli, pepper, cumin and a pinch of hing. It is salty, peppery and loud, with a little cardamom at the back. Choosing between Town Bus mixtures? Madras for the classic spicy plate; Bombay for milder, with cashews and melon seeds; garlic for the one you smell across the room.

Tip: Scatter a handful over curd rice just before eating. The crunch lasts about two minutes, which is exactly long enough.
