What it is

Tirunelveli halwa is made by slowly cooking fermented wheat milk with caramelised sugar and ghee, and locals credit the water of the Thamirabarani river for its flavour. By one account, the halwa reached Tirunelveli with Rajput cooks brought from Varanasi by a local zamindar.

It is dark, glossy and chewy, and it pulls away from the knife in soft slabs. It firms up in the cold and loosens again in a warm room. Choosing between halwas? Tirunelveli for dark and chewy; Bombay halwa for the bright, jelly-like kind; Mysore pak if you want something that crumbles.

Tip: Keep it out of the fridge. Chilled halwa goes hard and loses its shine.
