What it is

Sweet Karam Coffee is a Chennai brand started in 2015 by Nalini Parthiban and Anand Bharadwaj, built around the recipes of Janaki Paati. Their Madras mixture is the one you find in every Chennai snack shop jar.

This pack has crunchy gram-flour and rice-flour bits, aval (puffed rice flakes), peanuts, cashews and pottukadalai, with curry leaves, chilli and a pinch of hing. It is salty and only gently hot. Choosing between snacks? Madras mixture for a bit of everything; kara boondhi for plain spicy crunch; ribbon pakoda for something to snap.

Tip: Squeeze a little lemon over a bowlful and add chopped onion. It turns into a quick chaat.
