What it is

Sweet Karam Coffee is a Chennai brand started in 2015 by Nalini Parthiban and Anand Bharadwaj, built around the recipes of Janaki Paati. The snacks carry her name, and this is the coffee half of it.

The powder is 80% coffee and 20% chicory, ground for the steel filter. The chicory gives the decoction body and a slight bitterness, so it holds up under plenty of hot milk without going flat. Choosing between filter coffees? This 80:20 for a strong cup that still tastes of coffee; Kumbakonam Degree 70:30 for more chicory; Kumbakonam Degree Pure for none at all.

Tip: Let the first decoction drip through fully before you top up. The second pour is always weaker, so save it for the afternoon.
