What it is

Sweet Karam Coffee began in Chennai in 2015, the work of Nalini Parthiban and Anand Bharadwaj, with Janaki Paati's recipes at its heart. Madras mixture is the one every Tamil sweet shop sells loose: fried gram-flour bits, puffed rice flakes, nuts and roasted gram all tossed together with curry leaves and chilli.

This one has gram and rice flour, puffed rice flakes, peanuts, cashews, roasted Bengal gram and curry leaves, seasoned with chilli and hing. Every handful is a bit different. Choosing between mixtures? Madras mixture for the classic, Kerala garlic mixture for spice and garlic, kara boondi for small spicy pearls.

Tip: Stir a handful into bhel with onion, tomato and lemon for a quick chaat when guests turn up.
