What it is

Sweet Karam Coffee is a Chennai brand founded in 2015 by Nalini Parthiban and Anand Bharadwaj, and it draws on Janaki Paati's recipes. Kodubale is Karnataka's ring murukku: the dough is rolled into a rope, joined into a ring and fried until hard and crunchy.

This version has onion in the dough along with rice flour, rava, gram flour, urad dal flour, curd and sesame. The rings are thick and very crunchy, savoury with a sweetish onion note. Choosing between Sweet Karam Coffee's Karnataka snacks? Kodubale for a big crunch, nippattu for a flat, crisp round, butter murukku for soft.

Tip: Dunk one in hot tea for two seconds, no longer. It softens just enough on the outside.
