What it is

Sweet Karam Coffee began in Chennai in 2015, when Nalini Parthiban and Anand Bharadwaj built a snack brand around the recipes of Janaki Paati. Nippattu is the Karnataka cousin of Tamil thattai, and a fixture on festival plates in Bangalore and Mysuru.

These are flat rice-flour crackers with gram flour, peanuts, sesame, coconut, red chilli and curry leaves pressed right into them. They are thicker than thattai and crunch loudly, and every bite has a bit of peanut. Choosing between crackers? Nippattu for peanut and coconut; Tamil thattai for thinner and plainer; pepper thattai for a black-pepper bite.

Tip: In Bangalore, people crumble nippattu over a plate of chopped onion, tomato and coriander for a quick nippattu masala.
