What it is

Sweet Karam Coffee is a Chennai brand founded in 2015 by Nalini Parthiban and Anand Bharadwaj, built around the recipes of Janaki Paati. This Mysore pak is made with sugar, ghee (18%) and gram flour (14%), with a little sunflower oil and turmeric.

This is the soft kind, cut in squares and yielding when you bite, not the hard, porous kind that snaps. It is rich and sweet, with the grainy feel of besan and the smell of ghee. Choosing between Mysore paks? Soft for melt-in-the-mouth; GRB crispy Mysore pak for the older porous style; Suswaad Mysurpa for another traditional take.

Tip: Cut each square in half before putting it on the plate. It is rich, and half a piece goes further.
