What it is
Sweet Karam Coffee started in Chennai in 2015. Nalini Parthiban and Anand Bharadwaj built it around the recipes of Janaki Paati. Kara boondi is batter dropped through a perforated ladle into hot oil, so it fries into tiny crisp pearls, then gets tossed with chilli, curry leaves and nuts.
These are gram and rice flour pearls with peanuts, cashews, curry leaves, chilli and hing. The heat builds slowly rather than arriving all at once. This 180 g bag is the family size. Choosing between Sweet Karam Coffee's savouries? Kara boondi for small, spicy pearls, Madras mixture for a bit of everything, ribbon pakoda for flat crunch.
Tip: Stir a handful into a bowl of thick curd with chopped onion. That is boondi raita, done in a minute.
Goes well with: 777 Pepper Rasam Paste, Sweet Karam Coffee Ribbon Pakoda, Narasu's Udhayam Filter Coffee
