What it is

Sweet Karam Coffee, a Chennai brand founded in 2015 by Nalini Parthiban and Anand Bharadwaj, makes its snacks from Janaki Paati's recipes. In Kerala, kappa (tapioca, cassava) is a staple, and thin-sliced fried kappa chips are what you find in every bakery and tea shop.

These are just cassava fried in rice bran oil, with salt and a little chilli powder. They are thin but sturdy, with a clean, slightly earthy taste and a hint of heat. Choosing between Kerala chips? Plain kappa for everyday snacking, Indian Masala kappa for tang and spice, banana chips for sweet and familiar.
