What it is

Sweet Karam Coffee is a Chennai brand founded in 2015 by Nalini Parthiban and Anand Bharadwaj, with snacks built on Janaki Paati's recipes. Kerala bakeries each have their own mixture, and the garlic one is a favourite: gram-flour sev and boondi with peanuts, fried with whole spices and plenty of garlic.

This one has garlic (3.5%) with gram, rice and pea flour, peanuts, hing, and a warm spice blend of cardamom, cinnamon, pepper, star anise, fennel, cloves, bay leaf, coriander and turmeric. It is fragrant rather than fiery. Choosing between mixtures? Kerala garlic for spice and garlic, Madras mixture for classic, kara boondi for spicy pearls.

Tip: A handful on top of a plate of hot kappa or plain rice kanji makes it feel like a meal.
