What it is

TrueSouth says it has operated since 1905, with the Pereira family growing coffee on plantations in the Western Ghats. Its Malabar decoction is 75% coffee and 25% chicory, with no preservatives, added colours or sugars.

It is the decoction that normally drips through the steel filter for twenty minutes, already made. Pour it into hot milk, sweeten, and pull it between tumbler and dabara. The chicory gives the familiar thick, slightly bitter body. Choosing between coffees? This decoction for a quick cup any time; Narasu's or Kumbakonam filter powder when you have the filter out; Bru instant for the fastest cup.

Tip: Heat the milk until it just starts to froth, then pour in the decoction. Boiling the decoction itself dulls the taste.
