What it is

The 777 brand is named after its licence number under India's Fruit Products Order, and its roots go back to 1933 in Madras. Milagu rasam is the peppery version of rasam, thin and sharp with black pepper and tamarind, and this paste has the base ready.

Add water, simmer, temper, and it is done in about ten minutes. It is hotter at the back of the throat than tomato rasam. Choosing between rasam pastes? Pepper for heat; 777 garlic rasam paste for a strong garlicky one; 777 tomato rasam paste for mild and tangy.

Tip: Crush a few extra peppercorns into the tempering if you like it really sharp.
