What it is

Sweet Karam Coffee was founded in Chennai in 2015 by Nalini Parthiban and Anand Bharadwaj, and its snacks are built around the recipes of Janaki Paati. This is their Andhra murukku, the hot one in the range.

It is rice flour and gram flour with red chilli powder, garlic, sesame, cumin, ajwain and hing, pressed into thin coils and fried. The chilli arrives a second after the crunch, and the garlic stays with you. Choosing between murukkus? Andhra for heat and garlic; thenkuzhal for mild and plain; garlic murukku sticks for garlic without as much chilli.

Tip: Keep a glass of buttermilk nearby. It calms the chilli better than water does.
