What it is
Sohum is the food brand of Sohum Udyog at Khed Shivapur, near Pune. Its farali range is made for the fasting days that Maharashtrian and Gujarati homes keep through the year.
Ordinary dhokla is made from besan, which is off the table on upwas days. This mix uses fasting ingredients instead; our listing gives rajgira, sabudana and groundnut with rock salt and cumin. It steams into a soft, spongy square, finished with a cumin and green chilli tempering in ghee. Choosing between farali mixes? Dhokla for a steamed snack; upwas bhajani for crisp thalipith; sabudana for khichdi.
Tip: Cut into squares while still warm, then pour the tempering over. It soaks in better.
Goes well with: Sohum Upwas Bhajani, Sohum Rajgira Roll, GRB Pure Ghee
