What it is
Sohum Udyog, founded by the late Smt. Sushila Gargate at Khed Shivapur near Pune, makes a whole shelf of farali food for upwas days. Upwas bhajani is the fasting version of its thalipith flour.
The listing gives rajgira, sabudana, water chestnut flour and groundnut, with cumin and rock salt. It is made into a soft dough, patted out by hand and cooked crisp on the tawa with ghee or oil, then eaten with curd. Choosing between fasting flours? Upwas bhajani for thalipith; farali roti flour for softer rotis; sabudana for khichdi and vada.
Tip: Add grated boiled potato to the dough. It holds together far better and stays soft inside.
Goes well with: Sohum Rajgira Ladoo, Heera Sago Seeds Medium, Sohum Mini Sabudana Papad
