Heera is the main brand of P&B (Foods) Ltd, a Bradford firm that calls itself one of the largest independent wholesale distributors of Asian foods in Britain and Europe. Sago is made from tapioca starch, shaped into small white pearls; these are the medium size.

Soaked and cooked, the pearls turn soft and see-through, with a gentle chew that carries whatever they are cooked in. Choosing a payasam base? Sago for a soft, slippery payasam; Anil Roasted Vermicelli 450g for semiya payasam; Heera Moong Dal Washed 2kg for paruppu payasam.

Tip: For khichdi, press a soaked pearl between two fingers. If it squashes flat with no hard white centre, it is ready.
