What it is

Sohum Udyog, from Khed Shivapur near Pune, is known first for its Lokwan wheat atta. Its laddus are the Maharashtrian home kind, the ones that get made in big batches once the weather turns.

Paushtik laddu is a mixed one: seeds, nuts, dry coconut and a little wheat flour, bound with jaggery and ghee, with dry ginger and cardamom. It is chewier and less sweet than a besan laddu, with plenty to bite into. Choosing between Sohum laddus? Paushtik for seeds and nuts; dink for the crunch of gond; nachani for dark and earthy.

Tip: Break one in half before eating. They are dense, and half with tea is usually enough.
