What it is

Sohum is made by Sohum Udyog at Khed Shivapur, near Pune. Besides chakki-fresh Lokwan atta, it makes the everyday Maharashtrian sweets that once came out of every aaji's kitchen.

Nachani laddu is ragi flour roasted until it darkens, then bound with jaggery, ghee and dry coconut, with cardamom. It is dense and earthy, almost chocolate-dark, with none of the lightness of a besan laddu. The jaggery keeps the sweetness low and round, and the coconut gives it a little chew. Choosing between laddus? Nachani for dark and earthy; moong for pale and mild; paushtik for seeds and nuts.

Tip: Crumble one over warm milk with a pinch of cardamom for a quick bedtime bowl.
