What it is

Shan began as a small home-based business in Karachi, founded by Sikandar Sultan in 1981. It is now known for packaged spice and recipe mixes for South Asian dishes, and this one reaches a little further west.

Mandi is the one-pot rice and meat of Yemen, loved all over the Gulf. The meat is cooked first, and the rice is then cooked in its stock, so each grain takes the flavour. A piece of hot charcoal in the pot at the end gives the smoky finish. Choosing between Shan rice mixes? Mandi for mild and smoky; Bombay biryani for layered and spicier; Sindhi for tangier and hotter.

Tip: Serve it on one big platter in the middle of the table, with a sharp tomato and chilli sauce on the side.
