What it is

Shan Foods started in 1981 as a small home-based business in Karachi, founded by Sikandar Sultan. The name is known across South Asian kitchens for its packaged spice and recipe mixes.

Ginger garlic paste is the step between the onions and the masala in almost every North Indian and Pakistani gravy, and in most biryanis too. This one is more ginger than garlic, 53% to 34%, with salt and a little turmeric, so taste before you salt the pot. Choosing between pastes? Ginger garlic for biryani and gravies; plain garlic for dal and garlic-forward dishes; plain ginger for chai.

Tip: It already carries about 10% salt. Add the paste first, then salt the curry at the end.
