What it is

Tilda was founded in 1972 by Rashmi Thakrar, who came to the UK after the expulsion of Asians from Uganda. It is based in Rainham, England, and has been part of Spain's Ebro Foods since 2019. Tilda says its pure basmati is grown in the foothills of the Himalayas and purity tested.

The grains are long and slim with the familiar basmati smell, and they lengthen and stay separate when cooked, especially after a soak. Choosing between basmati? Tilda for dependable pulao and jeera rice; Daawat Extra Long for showpiece biryani; seeraga samba if the biryani is Dindigul or Ambur style.

Tip: Add a few drops of lemon juice to the cooking water. The grains come out whiter and stay apart.
