What it is

Sakthi began with turmeric. Dr P.C. Duraisamy started the business in Erode in 1977 as a small turmeric trading concern, and it has grown from there into a company making more than fifty spice and masala powders.

Manjal podi is the first thing into most Tamil pans, half a teaspoon going in with the onions rather than at the end, and a pinch into rice for colour. The ingredients list says turmeric powder and nothing else. Choosing between the yellows? Turmeric for everyday cooking, Kashmiri chilli for colour with less heat, a pooja tin of turmeric for the shelf rather than the pan.

Tip: Add it with the onions, not at the end. Stirred in late, turmeric tastes dusty.
