What it is
Sakthi Masala is based in Erode in Tamil Nadu, where Dr P.C. Duraisamy started out in 1977 trading turmeric. The company was formed as Sakthi Masala Private Limited in 1997.
Puliyodharai powder needs fat to work properly: two tablespoons of powder and a tablespoon of sesame oil to a cup of cooked rice. Mix it through warm rice rather than hot so the grains stay separate, then leave it an hour. Choosing between the rice mixes? Puliyodharai for sour and dark, lemon rice powder for sharp and yellow, tomato rice paste for something milder.
Tip: Better after an hour, better again the next day. Do not eat it straight out of the pan.
Goes well with: 777 Cold Pressed Gingelly (Sesame) Oil, Heera Pink Peanuts, Aachi Tomato Rice Paste
