What it is

Aachi Masala, founded in 1995 by A.D. Padmasingh Isaac, is a Chennai company known for South Indian spice blends. Its rice pastes are the shortcut for variety rice, and this one is for thakkali sadam.

The paste is tomato cooked with sesame oil, tamarind, chilli, mustard and asafoetida, so it is tangy first, then hot. Stir it through cooked rice and you have tomato rice for a lunch box, or thin it with water for a quick gravy. Choosing between rice pastes? Aachi tomato for tangy thakkali sadam; 777 vathal kuzhambu paste for something sour and dark; a puliyodharai paste for temple-style tamarind rice.

Tip: Mix it into rice that is warm, not steaming. Leave it 15 minutes and the rice takes the colour right through.
