What it is

Elaneer is tender coconut, the soft flesh of a young green nut rather than the hard white kernel of a mature one. This mix is built from coconut milk powder, coconut water powder and freeze-dried young coconut flesh, with cardamom, and it is made in Madurai.

Where semiya and paruppu payasam are ladled out hot, this one belongs cold, and warming it defeats the dish. One 100 g pack goes into a litre of milk and gives seven or eight servings. Choosing between the payasam? Elaneer for the cold one in summer, semiya for the everyday sweet, paruppu payasam for a sadya.

Tip: Bring it to a brief boil while stirring, then chill it properly. Served lukewarm it tastes like nothing at all.
