What it is

777 was started by brothers R.S. Narayanasamy Iyer and R.S. Ganapathy Iyer, whose Hotel Sri Rama Bhavan opened on Thambu Chetty Street in Madras in 1933. The name 777 comes from the licence number the business was given under India's Fruit Products Order.

This is the pink syrup behind rose milk, the cold drink of Chennai summers. It is sweet and floral, and a little goes a long way: a bottle makes a lot of glasses. Choosing between sarbaths? Rose for rose milk and falooda; nannari for a cooling lemon-and-water sarbath; kokum for a sour-sweet drink.

Tip: For rose milk, stir the syrup into cold milk, not warm. Warm milk dulls the rose.
