What it is

White ellu is the pale sesame that goes into ellu urundai, til ladoo and chikki for Sankranti and Pongal, and gets scattered over naan, thattai and murukku dough. In Maharashtra, til-gul is handed out at Sankranti with a line asking people to speak sweetly.

Raw, it tastes of very little. Toasted to pale gold, it turns nutty and fragrant, and that is when it goes into the jaggery. Choosing between sesames? White for sweets and toppings; Natures Till Seeds (Sesame) 100g - Black for ellu sadam and podi; Idhayam Gingelly (Sesame) Oil for the oil itself.

Tip: Toast until just golden and a seed crushes easily between your fingers. Past that, it tastes burnt in a sweet.
