What it is
Jaggery is sugarcane juice boiled down until it sets, the unrefined sweetener Tamil kitchens used long before white sugar. Sold in round balls like these, it is the vellam for everyday sweets, broken off as needed and melted down in a little water before it goes into the pot.
The yellow balls are lighter in colour and milder in taste than the brown, so they sweeten payasam, rava kesari and coconut fillings without darkening them much. Choosing between jaggery? Yellow balls for lighter sweets; Sri Durga brown balls for a deeper, caramel sakkarai pongal; jaggery powder for coffee and quick stirring.
Tip: For paal payasam, take the milk off the heat before stirring in the jaggery syrup, or the milk can split.
Goes well with: Heera Desiccated Coconut Fine, Swaad Green Cardamom, Heera Cashew Nuts
