What it is

Elakkai is the green pod that flavours payasam, kesari, laddu and chai, and goes whole into biryani and pulao. Inside each pod are small black seeds, which is where most of the aroma sits. Buying whole pods and crushing them as needed keeps that aroma far longer than ready powder.

It is sweet and floral, with a faint eucalyptus edge, and one crushed pod scents a whole pan. Choosing between sweet spices? Cardamom for payasam and chai; Swaad Jawantry (Mace) for a warmer note in biryani and milk sweets; Swaad Cinnamon Quills for kurma and garam masala.

Tip: Grind the seeds with a spoon of sugar. The sugar stops them sticking, and the powder goes straight into payasam.
