What it is

Moongil arisi is not rice at all. It is the seed of the bamboo, which flowers only once in many years and then dies back, so the grain turns up rarely and in small amounts. It is gathered in the forests of Kerala and Tamil Nadu when a flowering comes.

Cooked, it is chewy and slightly sticky, with a mild, faintly sweet taste, and it is often made into payasam with jaggery and milk or cooked like pongal. Choosing between special grains? Bamboo rice for payasam and something rare; Natures Black Kavuni Rice (Karuppu Kavuni Rice) for a dark sweet; Manna Barnyard Millet for everyday cooking.

Tip: Cook a small batch the first time. It is a harder grain than rice, and a long soak makes it far more even.
