What it is

Mappillai samba is a hardy red rice from Tamil Nadu. The name means the bridegroom's samba, and the story told in most homes is that a groom was once expected to eat it before his wedding.

The grain is red and very chewy, and it takes longer than any white rice to cook. It is eaten plain with kuzhambu, cooked soft as kanji, or ground into idli and dosa batter. Choosing between red rices? Mappillai samba for the most chew; Natures Kullakar Rice for batter; Natures Poongar Rice for everyday plain rice.

Tip: Give it at least an hour's soak, or overnight. Rushed, it stays hard in the middle even after six whistles.
