What it is

Native Food Store was started in Chennai in 2016 by P. Vishnukumar, an engineer by training, as a one-stop shop for millets and millet-based products. Ragi, kezhvaragu in Tamil, is the small red-brown millet behind koozh, kali and ragi mudde.

Ragi dosai look dark brown, almost chocolate, and taste earthy and faintly malty. They are softer than rice dosai and do best on a hotter tawa. Pair them with something sharp, like peanut or tomato chutney, or a spoon of milagai podi. Choosing between ragi options?
