What it is
Native Food Store was started in Chennai in 2016 by P. Vishnukumar, an engineer by training, as a one-stop shop for millets and millet-based products. Ragi, kezhvaragu or keppai at home, is the small red-brown millet behind koozh, kali and ragi dosai.
This is ragi cracked into rava, so it cooks like sooji into a grainy upma instead of a smooth kali. It comes out dark brown and earthy, and takes well to a sharp tempering of mustard, green chilli and ginger. Choosing between millet ravas? Ragi for a dark, earthy upma; kambu (pearl millet) for a nuttier grey one; makka cholam (maize) for a bright yellow plate.
Tip: Pour the boiling water in all at once and stir without stopping for the first minute. Ragi lumps the moment you look away.
Goes well with: Heera Curry Leaves, Heera Cashew Nuts, 777 Coriander Leaf Chutney / Thokku
