What it is

Native Food Store was started in Chennai in 2016 by P. Vishnukumar, an engineer by training, as a one-stop shop for millets and millet-based products. Kuthiraivali is barnyard millet, a small, pale grain that Tamil villages cooked like rice long before polished rice was everywhere.

Because the grain is so pale, these dosai come out close in colour to plain ones, soft in the middle and thin at the edge. The taste is mild, so a strong chutney or podi does the talking.
