What it is
Naga's founder, Kollur Sreenivasan, began as a wheat flour trader and opened his first flour mill in Chennai in 1962. The company is now based in Dindigul, Tamil Nadu. This is their maida: fine, white, refined wheat flour.
Maida is the flour behind layered parotta, bhatura, samosa pastry and most bakery-style cakes, because it kneads into a soft, stretchy dough. In Tamil Nadu it means one thing first: the flaky, coiled parotta of every roadside kadai, torn up and soaked in salna. Choosing between flours? Maida for parotta and bhatura, atta for chapati and phulka, besan for bajji batter.
Tip: For layered parotta, knead a soft dough with a spoon of oil and rest it at least two hours. Rested dough stretches thin without tearing.
Goes well with: Heera Chick Peas, Sakthi Chicken Masala, Fortune Refined Sunflower Oil
