What it is

Refined sunflower oil is the everyday frying oil in a lot of Indian kitchens, the big bottle kept under the counter for bajji, poori and appalam. It has been refined, so it is pale and has almost no taste of its own.

That plain taste is the point. It lets the masala, the curry leaves or the besan batter come through, and it copes with a deep kadai. It is not the oil for vathal kuzhambu or pickles. Choosing between oils? Sunflower for frying and everyday cooking; Idhayam Gingelly (Sesame) Oil for kuzhambu, podi and pickles; KTC Coconut Oil for Kerala dishes.

Tip: Drop a pinch of batter into the oil. If it rises straight up and sizzles, the oil is ready for bajji.
