What it is

Manna was started in Chennai in 2000 by I.S.A.K. Nazar, and its first product was a sathumaavu-style health mix, the Tamil multigrain porridge. Dates powder is one of the simpler things in the range.

It is dates, dried and ground fine, so the deep caramel taste of the fruit goes into a cup without any chopping. It is soft brown and a little sticky, and it dissolves best in something warm. Choosing a sweetener? Dates powder for a caramel note in milk and porridge; jaggery powder for payasam and pongal; Lion dates syrup for drizzling.

Tip: Warm a spoon of it in a little milk first, then add the rest of the cup. It mixes in smoothly that way.
