Seeraga Samba rice, also called seeraga samba arisi (Tamil).

What it is

Seeraga samba means "cumin samba", because each grain is tiny and shaped like a cumin seed, about a third the size of a basmati grain. It is grown along the Kaveri, in Thanjavur and the delta districts, where the samba crop is grown.

The grains stay short, take in the masala, and smell of ghee and spice by the time the lid comes off. That is why Tamil biryani uses it, not basmati. Choosing between biryani rices? Seeraga samba for Tamil-style biryani; basmati for long, separate grains in Hyderabadi or pulao; ponni for everyday meals.

Tip: Fry the washed, drained rice in a spoon of ghee for a minute before it goes into the pot. The grains stay separate.
