What it is

Cookd was started in Chennai in 2020 by Aathitiyan V.S. as a chef-led recipe-video brand, before it moved into biryani kits, masalas and cooking pastes. Wedding Bhai is its take on bhai veetu kalyana biryani, the biryani of Muslim weddings in Chennai.

The kit has everything except the meat or vegetables: 250 g of basmati, 250 g of paste and a 5 g sachet of seasoning oil. Cookd says it makes about 1.3 kg of biryani and serves three. Choosing between Cookd biryanis? Wedding Bhai for the festive basmati kit; Dindigul paste for seeraga samba and pepper; Ambur paste for the red, chilli-led one.

Tip: Fry the chicken in the paste for two full minutes before adding water. That is how the masala gets into the meat.
