What it is

The Grand Sweets and Snacks was started in 1982 in Gandhi Nagar, Adyar, by G. Natarajan. In Chennai it is famous for handing out its akkaravadisal free to customers as prasadam.

Kathirikkai thokku is traditionally brinjal cooked right down with tamarind and chilli until it turns dark and jammy and the oil rises to the top. It is thick enough to spread and sharp enough that one spoonful carries a whole plate of curd rice. Choosing between thokkus? Brinjal for tangy and rich; vathakuzhambu thokku for sour and deep; murungai keerai thokku for something greener.

Tip: Warm a spoonful in a little gingelly oil before mixing it into hot rice. It loosens and coats every grain.
