What it is

Cookd is a Chennai brand founded in 2020 by Aathitiyan V.S. It started as a digital-first brand built on chef-led recipe videos before launching biryani kits, masalas and cooking pastes. This is the paste from its Dindigul biryani kit, with a small sachet of seasoning oil.

Dindigul biryani is made with seeraga samba, the tiny Tamil rice that soaks up the masala. The pack says it makes 1.3 kg of biryani, enough for 3, in about 20 minutes, with any protein you like. Choosing between biryani pastes? Cookd or Veerah for Dindigul style, Cookd Ambur for the Ambur version, Aachi's kit if you want the rice in the box too.

Tip: Squeeze half a lime over the pot just before the dum. It lifts the whole biryani.
