What it is

Seeraga samba is a Tamil rice named for its tiny grains, about the size and shape of seeragam, cumin seeds. It is the rice of Dindigul and Ambur biryani, and of the big wedding biryanis cooked across Tamil Nadu.

The grains are short and slender, with their own gentle fragrance, and they soak up masala and ghee instead of sitting plain beside it. They cook faster than basmati and need less water. Choosing between biryani rices? Seeraga samba for Tamil-style biryani; long-grain basmati for Hyderabadi dum; golden sella basmati for grains that stay firm in a big pot.

Tip: Fry the soaked, drained rice in a spoon of ghee for a minute before the water goes in. The grains stay separate.
