What it is

Thenkuzhal is the plain one, and plain is the hard one. Rice flour and urad flour, pressed through a three-hole plate into hot oil, where it has to come out hollow rather than solid.

Get the ratio wrong and it turns chewy instead of snapping; too much urad and it drinks oil. Choosing between the murukku? Thenkuzhal for the mild one everyone eats, kai murukku for the hand-coiled version with more bite, poondu when you want garlic through it.

Tip: Eat it from the tin with filter coffee, not with a meal. It softens the moment it meets a wet plate.
