What it is

Thattai is patted flat rather than piped, which is where the name comes from, and the thinner it is patted the better it is judged to be. Rice flour with urad and Bengal gram gives it enough body not to shatter in the bag.

Red chilli and sesame sit on the surface where you taste them first, and asafoetida underneath. Choosing between the flat ones? Thattai for the full size disc, kara mini thattai for the small ones you eat by the handful, ribbon pakoda when you want strips instead.

Tip: Lift them out one at a time rather than tipping the bag. Stacked discs break each other on the way out.
