What it is

777 goes back to brothers R.S. Narayanasamy Iyer and R.S. Ganapathy Iyer, whose Hotel Sri Rama Bhavan opened on Thambu Chetty Street in Madras in 1933. The name 777 comes from the licence number the business was given under India's Fruit Products Order.

Nannari is the root of Hemidesmus indicus, Indian sarsaparilla, and the syrup is dark, sweet and faintly earthy, a bit like vanilla and root beer. It is the drink of summer sarbath stalls near temples. Choosing between 777 sarbaths? Nannari for the classic lime sarbath; rose for pink rose milk; kokum syrup for a sharper, sour drink.

Tip: A pinch of rock salt in the glass, the way the stalls do it, makes the lime sing.
