What it is

Seedai is almost entirely rice flour, rolled into balls the size of a marble and fried until they harden right through. Sesame and a little coconut go into the dough, and urad flour holds it together.

The whole craft is in the rolling: an air pocket left inside is what makes seedai burst in hot oil, which is why home cooks are nervous of it and why most people buy it. Choosing between the small ones? Seedai for the savoury rice ball, kara boondi for the gram flour drops, thattai for the flat discs.

Tip: Eat them by the handful, not one at a time. That is the whole point of the shape.
