What it is

Nendran is the Kerala plantain variety these are cut from, sliced thin from the green fruit and fried in coconut oil rather than a neutral one. Three ingredients in total, and the oil is a quarter of the pack.

Coconut oil is what makes a Kerala chip taste like a Kerala chip; fried in sunflower oil the same banana tastes of very little. Choosing between the chips? Nendran for the coconut oil version, kadalai when you want peanuts, small ring chips for the wheat rings.

Tip: Salt sinks to the bottom of the bag. Turn it over once before opening or the last handful is the salty one.
