What it is

Boondi is gram flour batter dropped through a perforated ladle into hot oil, so it sets as hundreds of small spheres rather than a single shape. Kara boondi is the savoury one, seasoned with chilli, pepper and turmeric.

Cashew and fried curry leaf go in at the end, which is what separates a good tin from a plain one. Choosing between the small snacks? Kara boondi for the loose handful, seedai for the firmer rice ball, classic mixture when you want boondi plus everything else.

Tip: Tip it into a bowl rather than eating from the bag. Boondi at the bottom of a bag turns to powder.
