What it is

Aachi Masala was founded in 1995 by A.D. Padmasingh Isaac and is headquartered in Chennai. Alongside its masalas it makes quick mixes for tiffin and sweets.

Kesari is the orange semolina sweet that turns up at every function, pooja and evening visit. This mix already holds the semolina, sugar, colour, cardamom, cashew and raisin, so you add ghee and water, stir on low, and it is ready before the coffee is. Choosing between sweet mixes? Rava kesari for quick and glossy; Aachi Thirunelveli halwa mix for a slow-stirred halwa; GRB payasam mix for something to pour.

Tip: Fold an extra spoon of hot ghee through at the very end. That shine is what makes it look like function kesari.
